Watermelon is one of my favorite fruits in the summer. It is low in calories, hydrating, refreshing, and delicious! I love to eat it in cubes, wedges, and especially in a salad form. My Watermelon Basil Salad with Mozzarella recipe is super simple to make, and is a perfect twist on the traditional caprese salad.

This watermelon salad is so darn good, and is the perfect combination of flavors. There is nothing better than mixing sweet and salty, and who doesn’t love cheese, am I right!? All you need for this recipe are 3 simple ingredients.

I love to get my ingredients fresh from my local Farmers’ Market. The ingredients always seem that much more refreshing, plus, I love eating local. However, the Farmers’ Market hasn’t started yet this year, so right now I am just getting all of the ingredients from my local grocer.

I have already made my Watermelon Basil Salad with Mozzarella recipe a few times this spring, and Memorial Day weekend definitely kicks off my summer watermelon addiction. This is my staple summer salad to bring to BBQ’s, on the boat, or to complete a meal with one more side dish. So naturally, I wanted to share this recipe with you today in case you needed a last-minute recipe for your celebrations!

Watermelon Basil Salad with Mozzarella

Ingredients

1 whole watermelon
1 (8oz.) package BelGioioso Fresh Mozzarella Pearls “Little Ones”
fresh basil

Instructions

1. First, wash and pat dry the watermelon. Then, cut the watermelon into cubes, discarding the rind.
2. Next, open the package of mozzarella and cut the mozzarella pearls in half.
3. Now, wash and pat dry the basil. Trim off the stems and discard them. If you prefer less basil per bite, chop the basil leaves in half.
4. Lastly, combine all prepared ingredients into a large bowl and enjoy!
